Place chuck roast, arm roast, or sirloin tip roast into crock pot. Wedge carrots and small Yukon gold potatoes around the edges. Sprinkle with 1/2 packet Lipton Onion Soup Mix. Then place layer of yellow onion rings over the top. Sprinkle with the remaining soup mix. Fill half-way up the side of the roast and vegetables with water. Cook until meat falls apart (usually about 6 hours).
